Usually, a polyacrylic or water-based topcoat will not yellow. Anything with oil on a lighter base coat will. :)

I bought the same desk today off Facebook Marketplace and the back has some damage so I will need to paint it.

I have this exact desk. My mother bought it for her mother in the 40’s. Mine have the exact pulls. The bottom is a bit different but other than that it is the exact desk. Thanks for the idea. Mine has been painted several times.
